Spicy Charred Broccolini

This has become one of my favorite weeknight vegetables because it’s quick, flavorful, and nutritious. Traditional Italian kitchens often prepare broccoli rabe (“rapini”) this way, but broccolini has become my go-to when that’s what is available locally. Same technique. Same spirit. Slightly sweeter finish.

 

Why this recipe works: A quick char brings out broccolini’s natural sweetness, while garlic, peperoncino, and lemon create a simple balance of brightness and heat.

How to Make Spicy Charred Broccolini:

Step 1: Prepare.

Place your cast iron skillet over medium heat (about 6–7) and allow it to heat for 5 minutes; and then prep the broccolini by trimming the ends and remove any tough leaves. If stems are thick, slice lengthwise so pieces cook evenly.

Step 2: Char.

Once the pan is hot, add the olive oil and allow it to warm for 1–2 minutes; then place the broccolini in a single layer. Let it cook untouched for 2–3 minutes to develop char.

Step 3: Season & Steam.

Turn with tongs. Add salt, garlic, chopped pepperoncini (adjust based on heat preference), and 1.5 tablespoons of water. Cover immediately and steam for 3 minutes. Remove from heat and serve with a squeeze of fresh lemon.

How to Serve Spicy Charred Broccolini:

 
  • Pair with a chilled glass of Soave to balance with the spiciness.
  • Serve alongside grilled chicken or salmon, or pile onto toasted Italian bread with burrata
  • Chop leftovers into scrambled eggs
  • Add to a grain bowl with farro + shaved parmesan

  • 1 ½ Tablespoons Extra Virgin Olive Oil
  • 12 ounces Broccolini - or Broccoli Rabe ("Rapini")
  • 5 Cloves Garlic, sliced
  • 2-3 small Dried Pepperoncini - roughly chopped
  • ⅛ - ¼ teaspoon Salt
  • 1 ½ Tablespoons Water
  • Lemon slices for garnish
