How to Make PROSCIUTTO WRAPPED ASPARAGUS:

STEP 1: Prep.

Prepare a large bowl filled with ice water. Bring a large pot of salted water to a boil; and slice or trim the ingredients.

STEP 2: Blanch.

Blanch the asparagus for 45–60 seconds, then transfer immediately to the ice bath using a spider or slotted spoon. Drain the asparagus and pat dry with paper towels. Arrange the asparagus, cantaloupe slices, and prosciutto strips on a cutting board.

STEP 3: Assemble.

Assemble each bundle by placing three asparagus spears on one cantaloupe slice. Wrap one strip of prosciutto around the center to secure everything together. Repeat with the remaining ingredients. Arrange the bundles on a serving platter. If desired, drizzle lightly with balsamic reduction just before serving.

  • 4 Prosciutto Slices - cut in half lengthwise
  • 24 Asparagus Spears - trimmed
  • ¼ Cantaloupe - cut into eight ½-inch-thick crescent slices

Instructions
