With just sugar, water, and a handful of herbs, spices, or dried flowers, you can transform drinks and desserts into something special. Whether it’s ginger in a hot tea, basil in a summer spritz, or rose in a glass of bubbly, these syrups bring flavor (and fun) into everyday moments.
What You’ll Need to Make Versatile Simple Syrups:
- Sugar
- Infusions Ingredients: Fresh Ginger, Black Peppercorns, Dried edible Rose Petals, or Fresh Basil

- Small jar for storage (or small bottle and funnel)
How to Make Versatile Simple Syrups:
STEP 1: Make Simple Syrup.
In a small saucepan, whisk the sugar and water together on medium-high heat. Bring to a simmer and continue to keep on heat until the sugar is dissolved, about 7-10 minutes.
STEP 2: Infuse.
Turn off the heat and add the desired infusion ingredient. Cover and let infuse for 30 minutes. Strain with a small mesh strainer and discard infused ingredients.
STEP 3: Store.
Let syrup cool completely before transferring to the storage jar or bottle. If you’re storing in a small bottle, use a funnel to then transfer to the bottle.
How to Serve Versatile Simple Syrups:
- Ginger Simple Syrup: Adds a spicy-sweet warmth to cocktails like a Whiskey Sour or Moscow Mule. Drizzle over fruit salad, or mix into hot tea for a soothing boost.
- Peppercorn Simple Syrup: Brings a subtle, peppery heat that’s lovely in a gin and tonic, lemonade, or brushed lightly on stone fruit before grilling.
